Ingredients

  2. kiwi - 2 kiwis (chopped for tenderizing meat)
  3. onions - watch the video to see (chopped)
  4. bell peppers - watch the video to see (chopped)
  5. tomatoes - watch the video to see (chopped, not too many)
  6. carrots - watch the video to see (chopped)
  7. garlic - watch the video to see (lots, as desired)
  8. salt - to taste (to season meat and vegetables)
  9. black pepper - to taste (to season meat and vegetables)
  10. olive oil - watch the video to see (for marinating and sautéing)
  11. butter - watch the video to see (for sautéing and finishing)
  12. Worcestershire sauce - 1 tablespoon (about 1 spoonful for marinade)
  13. soy sauce - 1 tablespoon (about 1 spoonful for marinade)
  14. foil - enough to cover tray (to line the baking tray)
  15. parchment paper - enough to cover tray (to place in the middle of foil)

Instructions

  1. Prepare the Meat and Marinade: Chop two kiwis and rub them into the shoulder meat to tenderize it. Season the meat thoroughly with salt and black pepper on all sides. Add a spoonful each of Worcestershire sauce and soy sauce. Drizzle olive oil over the meat and mix well. Let the meat marinate for at least one hour.
  2. Prepare Vegetables: Chop onions, bell peppers, tomatoes, carrots, and garlic. Season the vegetables with salt and black pepper.
  3. Prepare Baking Tray: Line a clean baking tray with foil. Place a sheet of parchment paper in the middle of the foil. Arrange the marinated meat on the parchment paper as one long piece. Add the seasoned vegetables and garlic around the meat.
  4. Sauté the Meat: Heat a pan with a spoonful of olive oil and a little regular oil to handle the heat. Sauté the meat until it starts to take on color. Then add butter to the pan to make the meat juicy and give it a nice color and flavor.
  5. Bake the Meat: Place the sautéed meat and vegetables back on the tray. Add a piece of butter on top of the meat. Seal the foil tightly around the meat and vegetables. Bake in a preheated oven at 180°C (356°F) for 2 hours.
  6. Finish Under the Grill: After baking, open the foil and place the tray under the grill to add color and a slight caramelized finish to the meat.
  7. Serve: Serve the grilled shoulder meat with mixed rice and enjoy.
