Ingredients

  1. eggplant - 1 pound (Korean variety preferred, about one pound)
  2. garlic cloves - 3
  3. green onions - 2
  4. soy sauce - 1 tablespoon (use 4 teaspoons for a vegetarian version)
  5. fish sauce - 1 teaspoon (optional, for non-vegetarians)
  6. hot pepper flakes - 1 teaspoon
  7. sesame oil - 2 teaspoons
  8. sesame seeds - 1 tablespoon (home-toasted, for garnish)

Instructions

  1. Prepare the steamer: Add two cups of water to a steamer pot with a steamer rack and bring to a boil.
  2. Prepare the eggplant: Quick wash the eggplant and cut it into roughly two and a half inch long pieces.
  3. Steam the eggplant: Once the water is boiling, steam the eggplant pieces for about 5 minutes or until a chopstick can easily go through.
  4. Prepare the seasoning sauce: Mince the garlic and green onions. In a bowl, mix the minced garlic and onions with soy sauce, fish sauce (if using), hot pepper flakes, and sesame oil.
  5. Tear the eggplant: Once cooled enough to handle, tear the steamed eggplant into bite-size pieces.
  6. Mix with seasoning sauce: Combine the torn eggplant with the seasoning sauce. Mix well.
  7. Garnish and serve: Garnish with home-toasted sesame seeds before serving.
