Prepare the Dough: Add milk, honey, egg, and yeast to a mixer bowl and mix.
Combine Ingredients: Add flour, olive oil, and salt. Beat for 7 to 8 minutes.
Knead and Rise: Knead the dough into a ball, transfer to an oiled bowl, cover, and let it rise for at least an hour.
Roll Out the Dough: Sprinkle work surface with olive oil, roll out dough into a large circle (about 40 cm in diameter).
Cut and Shape Croissants: Cut the dough into 16 triangular pieces, roll each piece to form croissants, and place on baking sheets.
Let Rise Again: Cover with cling film and let them rise for about an hour.
Prepare for Baking: Brush croissants with diluted egg yolk mixture.
Bake: Preheat oven to 180°C and bake for 12 to 14 minutes.
Fill Croissants: Once baked, cut croissants in half and fill with apricot jam.
