Ingredients

  1. whole milk - 200 g (at room temperature)
  2. honey - 2 teaspoons (for sweetness)
  3. dry yeast - 8 g (for dough rising)
  4. medium egg - 1 (for dough)
  5. bread flour - 380 g (for dough)
  6. olive oil - 80 g (plus extra for the bowl)
  7. salt - 1 teaspoon (to enhance flavor)
  8. egg yolk - 1 (diluted with milk for brushing)
  9. milk - 1 tablespoon (for diluting egg yolk)
  10. apricot jam - 200 g (sugar-free filling)

Instructions

  1. Prepare the Dough: Add milk, honey, egg, and yeast to a mixer bowl and mix.
  2. Combine Ingredients: Add flour, olive oil, and salt. Beat for 7 to 8 minutes.
  3. Knead and Rise: Knead the dough into a ball, transfer to an oiled bowl, cover, and let it rise for at least an hour.
  4. Roll Out the Dough: Sprinkle work surface with olive oil, roll out dough into a large circle (about 40 cm in diameter).
  5. Cut and Shape Croissants: Cut the dough into 16 triangular pieces, roll each piece to form croissants, and place on baking sheets.
  6. Let Rise Again: Cover with cling film and let them rise for about an hour.
  7. Prepare for Baking: Brush croissants with diluted egg yolk mixture.
  8. Bake: Preheat oven to 180°C and bake for 12 to 14 minutes.
  9. Fill Croissants: Once baked, cut croissants in half and fill with apricot jam.
  10. Serve: Serve warm and enjoy!
