  10. warm water - 250 g (for burger bun)
  11. sugar - 100 g (for burger bun)
  12. egg - 1 (for burger bun)
  13. melted butter - 75 g (for burger bun)
  14. yeast - 8 g (bloomed in water, for burger bun)
  15. activated charcoal - 3 tablespoons (for burger bun)
  16. riced baked potato - 150 g (for burger bun)
  17. all-purpose flour - 625 g (for burger bun)
  18. salt - 2 teaspoons (for burger bun)
  19. red wine - 2 cups (for demon blood sauce)
  20. beef or chicken stock - 2 cups (for demon blood sauce)
  21. butter - 2 tablespoons (room temperature, for demon blood sauce)

  24. cold butter - 8 tablespoons (for demon blood sauce)
  25. spam - 1 block (optional for burger)

Instructions

  1. Prepare Beef Tongue: Trim the silver skin off the beef tongue.
  2. Prepare Patty Meat: Cut lamb shoulder, beef rump, and pork belly into pieces. Freeze until hard, then blend in a food processor to desired texture.
  3. Season Meat Mixture: Add smoked paprika, ground ginger, mustard powder, white pepper, and onion powder to the meat mixture.
  4. Make Burger Buns: Mix warm water, sugar, egg, melted butter, bloomed yeast, activated charcoal, riced baked potato, all-purpose flour, and salt. Knead and let proof. Shape into buns and bake.
  5. Make Demon Blood Sauce: Reduce red wine, add stock and reduce again. Thicken with a mixture of butter and flour, season with salt and brown sugar, finish with cold butter.
  6. Prepare Beef Tongue/Spam: Slice beef tongue or spam and sear in a pan.
  7. Cook Patties: Form meat mixture into patties, sear, and top with American cheese.
  8. Assemble Burger: On a bun, place beef tongue or spam, add a spoonful of demon blood sauce, top with a patty and cheese, and cover with the bun top. Optionally, add pickles.
