A rich and flavorful sandwich featuring a homemade cheese filling with caramelized onion jam, spread on buttery brioche bread, and complemented with fig jam.

fig jam - a few tablespoons
Instructions
Prepare Cheese Filling: Cube 7 oz of comp cheese and combine in the food processor with 2 oz of Brie and 2 tbsp of dry white wine or sherry. Process into a paste for about 60 seconds.
Add Onion Jam: Mix in about 2 tbsp of caramelized and cooled onion jam. Pulse a couple of times just to chop up and disperse the onions.
Prepare Bread: Butter both sides of brioche bread generously.
Add Fig Jam: Spread a few tablespoons of fig jam on the bread.
Assemble Sandwich: Top the fig jam with a pressed patty of the cheese mixture.
Toast Sandwich: Toast the sandwich as usual until golden and crispy.
