Instructions

  1. Marinate the shrimp: Marinate peeled and deveined shrimp with salt, white pepper, and cornstarch.
  2. Prepare the eggs: Crack eggs into a bowl, add salt, oil, and sugar.
  3. Add green onions: Mix in the green onions with the eggs.
  4. Stir-fry the shrimp: Heat a wok on high, coat the surface with oil, and stir-fry the shrimp until they are about 80% cooked. Then, transfer them to the egg mixture.
  5. Cook the eggs and shrimp: Add oil to the wok, bring up the temperature, and pour in the egg and shrimp mixture. Wait about 10 seconds before starting to fold the cooked eggs into themselves while letting the raw egg flow underneath.
  6. Finish cooking: After 30 seconds, turn off the heat and continue to build layers with the residual heat.
