Instructions

  1. Prepare Ingredients: Chop seafood mushrooms, king oyster mushrooms, shiitake mushrooms, wood ear mushrooms, carrots, red bell pepper, tomatoes, tofu, and green onions.
  2. Make Slurry: Mix cornstarch and water in one bowl.
  3. Crack Eggs: Crack eggs into another bowl and beat them.
  4. Cook Dried Chili Peppers: Add some oil and dried chili peppers into the wok. Toss them around for a while, then discard them.
  5. Cook Tomatoes: Cook the tomatoes for one minute.
  6. Add Boiled Water and Season: Pour in boiled water. Season with white pepper, salt, sugar, light soy sauce, and dark soy sauce.
  7. Add Chopped Ingredients: Add all the chopped ingredients excluding the green onions. Stir gently.
  8. Bring to a Boil: Cover the wok and bring the soup to a boil.
  9. Add Slurry and Eggs: Once it's boiling, remove the lid and pour in the slurry, stirring constantly. Now pour in the beaten eggs.
  10. Final Seasoning: Finally, add vinegar and sesame oil to taste and give it one last stir.
  11. Serve: Transfer the soup into a bowl and serve.
