Ingredients

  1. all-purpose flour - 1 cup
  2. rice flour - 2 tbsp
  3. corn starch - 2 tbsp
  4. salt - 2 tsp (plus more for seasoning)
  5. baking soda - 1/4 tsp
  6. garlic powder - 1 tsp
  7. onion powder - 2 tsp
  8. paprika - 2 tsp
  9. extra cold lager beer - 1 1/2 cups
  10. white fish (cod) - watch the video to see (cut into chunks)
  11. mayonnaise - 1 cup (good-quality)
  12. dill pickles - 2 tbsp (finely chopped)
  13. capers - 1 tbsp (chopped)
  14. fresh lemon juice - 1 tbsp
  15. Dijon mustard - 1 tsp
  16. Worcestershire sauce - 1 tsp (optional)
  17. fresh dill - 2 tbsp (finely chopped)
  18. tarragon - 2 tbsp (finely chopped)
  19. shallot or red onion - 1 tbsp (finely chopped)
  20. garlic powder - 1/2 tsp
  21. freshly ground black pepper - to taste (to taste)

Instructions

  1. Prepare the Beer Batter: Mix all-purpose flour, rice flour, corn starch, salt, garlic powder, onion powder, paprika, and baking soda in a bowl. Place in the freezer for 10 minutes along with the beer.
  2. Make the Tartare Sauce: Combine mayonnaise, chopped dill pickles, chives, tarragon, capers, Dijon mustard, Worcestershire sauce, pepper, diced shallot, and lemon juice. Mix well.
  3. Prepare the Fish: Cut the white fish into chunks that fit your bun. Season well with salt.
  4. Batter the Fish: Stream in the ice-cold beer into the flour mixture and whisk until smooth. Lightly flour the fish chunks before dipping in the batter.
  5. Fry the Fish: Fry the battered fish at 375°F for about 4 minutes or until crispy. Immediately season with a little more salt after frying.
  6. Assemble the Sandwich: Layer tartare sauce, butter lettuce, fried fish, and more tartare sauce on a bun. Top with the other half of the bun.
