Ingredients

  1. Sourdough bread slices - watch the video to see (based on servings)
  2. Tomatoes - 2 per serving (2 per serving, roughly cut into small pieces)
  3. Garlic - 1 clove per 2 pieces (1 clove per 2 pieces, skin removed, plus extra for rubbing)
  4. Extra virgin olive oil - watch the video to see (EVOO, be generous)
  5. Fresh basil - 1 bunch (A bunch, leaves broken by hand)
  6. Salt - to taste (to taste)
  7. Pepper - to taste (to taste)

Instructions

  1. Prepare the Tomato Mixture: Cut the tomatoes roughly into small pieces over a bowl to catch all the excess liquid. Crush the garlic directly into the bowl and mix to combine.
  2. Add Basil, Season, and Rest: Break the basil leaves by hand and add them in, then season with salt and pepper to taste. Pour a generous amount of EVOO in too and mix everything well. Let it rest for at least 5 minutes, but no longer than an hour.
  3. Toast the Bread: Set your gas BBQ to low heat and toast the bread until it becomes crunchy or golden brown.
  4. Rub Garlic on Toasted Bread: Take a garlic clove and rub it over the surface of the toasted bread slice until it is lightly covered.
  5. Top with Tomato Mixture: Spoon some of the tomato juice onto the toasted bread, letting it soak in. Then scoop a portion of the tomato mixture on top of each bread slice, making sure to cover the entire surface. Drizzle with some extra juice from the tomato mixture and add a fresh basil leaf on top.
  6. Serve: Add a few extra fresh basil leaves on top for that final touch of flavor. Serve immediately on a flat plate.
