Instructions

  1. Prepare the Chicken: Remove skin and bones from chicken breasts or use boneless thighs. Slice chicken into medium strips or julienne style. Place in a container.
  2. Marinate the Chicken: Marinate chicken with soy sauce, minced garlic, grated ginger, salt, pepper, and optionally MSG. Let it rest for about 15 minutes to absorb flavors.
  3. Prepare the Coating Mixture: In a bowl, whisk together cornstarch, wheat flour, eggs, a pinch of baking powder or baking soda (optional), a little salt, and warm water to form a batter. Adjust thickness by adding more cornstarch or flour if needed.
  4. Coat the Chicken: Dip marinated chicken pieces into the batter mixture, ensuring they are well coated.
  5. Fry the Chicken: Heat canola or frying oil to about 325°F (163°C). Fry chicken pieces in batches to avoid lowering oil temperature. Fry for about 2-3 minutes until golden and crispy. Remove and drain on paper towels. Then fry again for about 1 minute to ensure crispiness and prevent coating from falling off.
  6. Prepare the Honey Sauce: In a saucepan, combine honey, white sugar, water, ketchup, soy sauce, white or rice vinegar, minced garlic, grated ginger, and a few drops of sesame oil. Heat until bubbling and slightly thickened. Adjust seasoning as desired.
  7. Cook the Noodles: Boil Chinese noodles (spaghetti, tagliatelle, ramen, or rice noodles) for about 10-12 minutes until tender but not mushy. Drain and rinse under cold water to stop cooking and remove excess starch.
  8. Stir-Fry Vegetables: In a hot wok or skillet, sauté sliced onion, bell peppers, carrots, and cabbage until aromatic and slightly tender. Add scallions near the end.
  9. Combine Noodles and Vegetables: Add cooked noodles to the stir-fried vegetables. Add soy sauce and a splash of vegetable broth or water to moisten. Toss well to combine and heat through.
  10. Assemble the Dish: Add the fried chicken pieces to the honey sauce, coating them well. Serve the honey chicken alongside the stir-fried noodles with vegetables.
