Ingredients

  1. Chicken mix boti - 750 g (750 grams)
  2. Ginger garlic crushed - 2 tbsp (2 tablespoons)
  3. Himalayan pink salt - 1 tsp (1 teaspoon or to taste)
  4. Cooking oil - 80 ml (1/3 cup)
  5. Water - 120 ml (1/2 cup or as required)
  6. Yogurt (whisked, room temperature) - 240 ml (1 cup)
  7. Green chillies - 2-3 (2-3 whole)
  8. Black pepper crushed - 1 tsp (1 teaspoon)
  9. Coriander seeds crushed - 1 tsp (1 teaspoon)
  10. White pepper powder - 1/2 tsp (1/2 teaspoon)
  11. Cumin seeds roasted & crushed - 1/2 tsp (1/2 teaspoon)
  12. Chicken powder - 1 tsp (1 teaspoon)
  13. Coconut milk powder (optional) - 1 tbsp (1 tablespoon)
  14. Lemon juice - 2 tsp (2 teaspoons)
  15. Ginger julienne - 1 inch (1 inch piece)
  16. Cream (room temperature) - 180 ml (3/4 cup)
  17. Cheddar cheese slices - 3 slices (3 slices)
  18. Garam masala powder - 1/2 tsp (1/2 teaspoon)

Instructions

  1. Cook chicken with spices: In a wok, add chicken, crushed ginger garlic, pink salt, cooking oil, and water. Mix well and bring to a boil. Cover and cook on high flame for 5-6 minutes, then continue cooking on high flame until water dries up (about 1-2 minutes).
  2. Add yogurt and spices: On low flame, add whisked yogurt, green chillies, crushed black pepper, crushed coriander seeds, white pepper powder, roasted and crushed cumin seeds, chicken powder, coconut milk powder (optional), and lemon juice. Mix well and cook on high flame until oil separates (2-3 minutes).
  3. Add ginger: Add julienned ginger and mix well.
  4. Add cream: On low flame, add cream and mix well.
  5. Add cheese and cook: Add cheddar cheese slices, cover, and cook on low flame for 8-10 minutes. Then mix well and cook for an additional 2 minutes.
  6. Finish and garnish: Add garam masala powder and fresh coriander. Garnish with sliced green chillies and julienned ginger. Serve hot with naan.
