  2. tomatoes - 2 (diced)
  3. black beans - 1 cup (pre-cooked or canned)
  4. green onions - 1 oz (28g) (chopped)
  5. tortillas - 4 (flour or corn)
  6. cheese blend - 2 oz (57g) (Mexican style: cheddar, Monterey Jack, Asadero, Blanco)
  7. avocado - 1 (sliced or diced)
  8. small onion - 1 (chopped)
  9. enchilada sauce - 1-2 Tbsp (for flavor)
  10. olive oil - 1 Tbsp (for cooking)
  11. sour cream - 1 Tbsp (for topping)

Instructions

  1. Prepare Ingredients: Dice tomatoes, chop green onions and small onion, slice or dice avocado. Cut chicken breast into pieces.
  2. Cook Chicken: Heat olive oil in a skillet over medium heat. Add chicken pieces and cook until browned and cooked through. Season with taco seasoning and salt.
  3. Add Vegetables and Beans: Add chopped onion, tomatoes, and black beans to the skillet with chicken. Stir and cook until vegetables are tender.
