  2. butter - 3 tbsp (for sautéing and sauce)
  3. garlic - 1 tbsp (minced)
  4. onion - 1 medium (chopped)
  5. fresh thyme - 1 sprig (sprig)
  6. fresh rosemary - 1 sprig (sprig)
  7. boneless chicken - 100 g (shredded)
  8. button mushrooms - 7-8 pieces (sliced)

  11. spinach leaves - 1 cup (chopped)
  12. all-purpose flour - 2 tbsp (for sauce, equal ratio with butter)
  13. warm milk - 1 cup (for sauce)
  14. blanched tomato - 1 medium (peeled and chopped)
  15. mustard sauce - 1/4 tsp (just a hint)
  16. fresh red chili - 1 (deseeded and chopped, optional for spice)
  17. fresh cream - 1/4 cup (for richness)
  18. egg - 1 (to bind casserole)
  19. nutmeg powder - a pinch (a pinch)
  20. processed cheese - 100 g (grated)

Instructions

  1. Prepare Mushrooms and Chicken: Heat olive oil and 1 tbsp butter in a pan. Add minced garlic and chopped onion, sauté briefly. Add fresh thyme and rosemary, stir. Add shredded chicken and sliced mushrooms, toss and cook until done. Season with salt and black pepper.
  2. Add Spinach: Add chopped spinach to the pan at the last minute and cook until just wilted.
  3. Make the Sauce: In a separate pan, melt 2 tbsp butter. Add flour and cook to form a roux. Gradually add warm milk while stirring continuously. Bring to a boil and cook until sauce thickens.
  4. Add Tomato to Sauce: Add chopped blanched tomato (skin removed) to the sauce to add a slight tang. Cook briefly.
  5. Combine Sauce and Chicken Mixture: Transfer the sauce back to the chicken and vegetable mixture. Stir well to combine.
  6. Add Final Flavorings: Add cracked black pepper, mustard sauce, chopped fresh red chili (optional), fresh cream, egg, and a pinch of nutmeg powder. Mix thoroughly to distribute the egg evenly.
  7. Add Cheese and Bake: Add grated processed cheese to the mixture and transfer everything into a baking casserole dish. Top with chopped basil, blanched tomatoes, and additional cheese as desired.
  8. Bake: Bake in a preheated oven at about 180°C (350°F) for 7-8 minutes until cheese is melted and casserole is heated through.
