Prepare Dough: To a mixer, add strong white bread flour, eggs, sugar, salt, and a splash of water. Add fresh yeast, then slowly add in your softened butter. Now set into a bowl and allow to prove for at least half an hour.
Form Donuts: Portion it into roughly 10g balls and then slowly pull the far end of the ball towards you in your hand to make a perfect sphere.
Fry Donuts: Fry at 170°C for about 6 to 8 minutes. Flip them over halfway through and then remove.
Make Cheese Custard: Start by soaking your gelatin leaves. Add your cream and water to the pan and then add an egg yolk and a whole egg. Put the mixture over the egg yolk and then return to the pan to thicken. Slowly add your gelatin and hand blend in lots of grated cheddar so it's really nice and smooth. Then you want to chill it down over ice.
Fill and Serve: Once your custard is set, put it into a piping bag or a bottle. Put a little bit on the board and then shove a good amount inside and cover these beautiful warm bowls with a little bit of microplaned cheese.
