Prepare the Pork: Poke the pork butt with a fork to allow it to better absorb the marinade. Cut the pork into long strips about an inch thick, following the grain.
Marinade Preparation: Combine garlic salt, brown sugar, oyster sauce, light soy sauce, hoisin sauce, red wine, shaoxing wine, mashed fermented bean curd, and five spice powder in a bowl to create the marinade.
Marinate the Pork: Place the pork strips in a ziploc bag, pour in the marinade, and massage well. Let it marinate for at least 8 hours, ideally overnight, but not more than 24 hours.
Prepare for Cooking: Preheat the oven to 425°F (218°C). Place the marinated pork on a baking rack over a pan. Add 1-2 tablespoons of water to the pan.
Cooking Process: Cook for 15 minutes and lather with marinade. Repeat once more. Then cook for 10 minutes and lather with diluted honey. Increase the oven temperature to 450°F and cook for another 5 minutes, lathering once more with honey.
Serve: Let the Char Siu cool for a few minutes before cutting into it. Serve as desired.
