Ingredients

  1. extra virgin olive oil - 4 tbsp
  2. butter - 100g
  3. onions - 2 (diced, large or 4 small)
  4. garlic - 3 cloves (finely chopped)
  5. green peppers - 2 ((sivri biber, padrons, or regular green pepper))
  6. sweet paprika - 2 tsp
  7. tomato paste - 1 tbsp
  8. chopped tomatoes - 4 dl ((1 can))
  9. coarse black pepper - 2 tsp
  10. coarse bulgur - 400g
  11. water or vegetable broth - 0.5 liter
  12. salt - watch the video to see (to taste)

Instructions

  1. Sauté vegetables: Heat olive oil and butter in a pot. Sauté onions, garlic, and green peppers.
  2. Toast bulgur: Add bulgur to the pot and toast until it emits a nutty aroma.
  3. Add spices and tomatoes: Stir in tomato paste, black pepper, and paprika. Add chopped tomatoes and cook until the sour smell of the tomato paste disappears.
  4. Cook the bulgur: Add water or vegetable broth. Cook until bulgur is tender and water is absorbed, about 20 minutes.
  5. Let it rest: Turn off the heat and let the bulgur pilavi rest for 10-15 minutes before serving.
