  4. turmeric - 1 (thumb-sized piece, peeled and chopped)
  5. ginger - 1 (thumb-sized piece, chopped)

  7. lemongrass - 2 sticks (bottom part only, finely chopped)

  9. candle nuts - watch the video to see
  10. coconut milk - watch the video to see
  11. cinnamon stick - 1

Instructions

  1. Make Curry Paste: Blend shallots, garlic, turmeric, ginger, galangal, lemongrass, dried chilies, and candle nuts into a paste.
  2. Cook Curry Paste: Cook curry paste with oil until fragrant, then add spices and coconut milk.
  3. Add Beef and Simmer: Add beef cheeks to the pot, simmer for 2 hours, then continue cooking with lid off to reduce.
  4. Finish with Coconut and Tamarind: Stir in toasted coconut, palm sugar, and tamarind puree. Adjust seasoning.
  5. Serve: Serve with rice and a side salad of cucumber, mint, and toasted peanuts.
