Instructions

  1. Prepare the Marinade: Chop up garlic, ginger, and green onion. In a bowl, add garlic salt, sugar, white pepper, cornstarch, and cooking wine. Add in the minced aromatics and mix everything together.
  2. Marinate the Cod: Dry the cod fillets with some paper towels. Mix the marinade with the fish, making sure to coat every piece.
  3. Prepare the Dipping Sauce: Combine light soy sauce, dark soy sauce, rice vinegar, sugar, and chili sauce to make the dipping sauce.
  4. Cook the Cod: Place the fish on foil-lined trays. For air fryer, cook for 11 minutes at 375 degrees Fahrenheit. For oven, preheat to 425 degrees Fahrenheit, then cook for 15 minutes on a lower rack, followed by 5 minutes on the highest rack.
