  6. vinegar - 1/4 cup (for daqqa and sauce)
  7. tomatoes - 4 large (blended for sauce)

  9. cumin - 1 teaspoon (for seasoning)
  10. coriander - 1 teaspoon (for seasoning)

  13. Egyptian rice - 2 cups (for the base)
  14. vermicelli - 1 cup (for mixing with rice)
  15. lentils - 1 cup (cooked)
  16. hot sauce powder or chili flakes - 2 tablespoons (for spicy oil)
  17. spaghetti - 1 cup (for pasta layer)
  18. marbled pasta - 1 cup (for pasta layer)

Instructions

  1. Prepare Onions: Cut white onions into julienne slices, coat with flour and starch, and strain.
  2. Fry Onions: Heat oil in a pan and fry the onions until golden brown.
  3. Make Daqqa: In a pot, sauté garlic in onion oil, add vinegar, and then mix with lemon, water, salt, cumin, and coriander.
  4. Prepare Sauce: Blend tomatoes and add to the garlic and vinegar mixture, season with salt, pepper, and broth.
  5. Cook Rice and Vermicelli: In a pot, sauté vermicelli in onion oil, add rice, and stir well.
  6. Boil Lentils: Cook lentils in boiling water with salt, cumin, and coriander for about 10-15 minutes.
  7. Combine Ingredients: Mix cooked lentils with rice and vermicelli, add boiling water to cover.
  8. Prepare Pasta: Boil spaghetti and marbled pasta in salted water, drain without rinsing.
  9. Assemble Koshary: Layer pasta, rice, and lentils, then top with sauce, daqqa, and crispy onions.
