Ingredients

  1. nopales - 500 grams (without bones and well washed)
  2. onion - watch the video to see (for cooking nopales)
  3. garlic - watch the video to see (for cooking nopales)
  4. salt - watch the video to see (to taste)
  5. green tomato peels - watch the video to see (helps to cut the slime of nopales)
  6. panela cheese - watch the video to see (cut into pieces)
  7. corn tortillas - watch the video to see (cut into triangles, preferably from the day before)
  8. onion - 1/4 (cut into feather shape)
  9. ripe tomatoes - 450 grams (very small)
  10. green tomato - watch the video to see
  11. serrano peppers - a couple
  12. chiles de árbol - watch the video to see (slightly roasted)
  13. small piece of onion - 1 (for the salsa)
  14. cloves of garlic - 2 (for the salsa)

Instructions

  1. Prepare Nopales: Cook the fresh nopales without water, letting them sweat with onion, garlic, salt, and some green tomato peels. Once cooked, rinse them with cold water.
  2. Make Tortilla Chips: Fry corn tortillas cut into triangles in a little hot oil until they turn into tortilla chips.
  3. Prepare the Salsa: In boiling water, add serrano and árbol peppers. Five minutes later, add the tomatoes without the stem. Three to four minutes later, add the green tomatoes. Once they change color, turn off the heat. In a blender, blend the onion, garlic, peppers, a little cooking water, tomatoes, and green tomatoes until smooth.
  4. Cook the Sauce: In a little hot oil, start by frying the onion. Four to five minutes later, when the onion is sautéed, add the sauce, season with salt, and let it cook over medium heat for 15 minutes.
  5. Combine Ingredients: Add the nopales to the sauce and cook them together so that all the flavors are integrated. Ten minutes later, add the pieces of grilled cheese, lower the heat, and cover. A few minutes later, when the cheese is hot, the dish is ready to be served.
  6. Serve: Serve the nopales with cheese in sauce accompanied by tortilla chips on the same plate.
