Ingredients

  4. unsalted butter - 1/2 tablespoon (softened, for dough)
  5. egg yolks - 6 (separated from 6 eggs, for dough)

  7. granulated sugar - 1/3 cup (to make homemade powdered sugar coating)
  8. vanilla bean - 1 (seeds scraped for mixing into powdered sugar)

Instructions

  1. Prepare Homemade Powdered Sugar: Grind 1/3 cup granulated sugar in a clean coffee/spice grinder until fine powder. Scrape seeds from 1 vanilla bean and mix thoroughly into the powdered sugar. Set aside.
  2. Make the Dough: In a mixing bowl, combine 1 1/3 cups all-purpose flour, a pinch of salt, 1/2 tablespoon softened unsalted butter, and 6 egg yolks. Add 1/4 cup white wine (preferably Riesling). Mix with a hook attachment on low speed, gradually increasing speed, for about 4-5 minutes until a firm, non-sticky dough forms. Adjust flour or wine as needed for consistency.
  3. Shape the Dough: Divide dough in half. Roll out each half on a floured surface into a thin rectangle. Cut each half into 8 strips using a pastry wheel cutter with a wavy edge. Make a slit in the center of each strip and pull one end through the slit to create the traditional twisted shape.
  4. Fry the Pastries: Heat oil in a large pot over medium heat (about 5-6 on induction). Test oil readiness by dropping a small piece of dough; it should bubble immediately. Fry 3 pastries at a time, turning once, until golden and puffed, about 1-2 minutes per side. Remove and drain on paper towels.
  5. Sugar Coat: While still warm, toss the fried pastries in the homemade vanilla powdered sugar until well coated. Optionally, dust additional powdered sugar using a strainer before serving.
