Ingredients

  1. water - 900ml
  2. kombu - 10g
  3. dried sardines - 20g
  4. thick bonito flakes - 20g
  5. thin bonito flakes - 5g
  6. soy sauce - 1 teaspoon (for seasoning)
  7. salt - a pinch (for seasoning)

Instructions

  1. Prepare the Soup Base: Add dried sardines, kombu, and water in a pot and heat until just before boiling. Remove the sardines and kombu.
  2. Add Bonito Flakes: Add thick bonito flakes and boil for a few minutes. Turn off the heat, add thin bonito flakes, and wait for about 5 minutes until they sink.
  3. Season the Soup: Filter the soup with a paper towel. Season with soy sauce and a pinch of salt.
