Ingredients
- Tom Yum MAMA instant noodles - 2 packs (2 packs)
- Shrimps - 300g (peeled and deveined)
- Minced pork - 200g (fresh)
- Cherry tomatoes - 100g (halved)
- Long beans - 100g (cut into bite-size pieces)
- Shallots - 5 pieces (thinly sliced)
- Coriander leaves - 1 cup (fresh)
- Kaffir lime leaves - watch the video to see (fresh, finely sliced)
Instructions
- Prepare Noodles: Cook the Tom Yum Mama noodles according to package instructions, drain and set aside to cool.
- Cook Proteins: In a pan, cook the minced pork until browned. Separately, cook the shrimps until pink and cooked through. Set aside.
- Prepare Vegetables: Slice the cherry tomatoes in half, cut the long beans into bite-size pieces, thinly slice shallots, and finely slice kaffir lime leaves.
- Make Dressing: In a mortar and pestle or blender, combine coriander stems, garlic cloves, chilli padi, lemongrass, lime juice, sugar, fish sauce, and Mama seasoning packs. Blend or pound until smooth. Slowly add oil while mixing to emulsify.
- Assemble Salad: In a large bowl, combine cooked noodles, minced pork, shrimps, cherry tomatoes, long beans, shallots, coriander leaves, and kaffir lime leaves. Pour the dressing over and toss well to combine.
- Serve: Serve immediately to enjoy the fresh, sweet, sour, spicy, and savory flavors.
