Prepare Noodles: Cook the Tom Yum Mama noodles according to package instructions, drain and set aside to cool.
Cook Proteins: In a pan, cook the minced pork until browned. Separately, cook the shrimps until pink and cooked through. Set aside.

Make Dressing: In a mortar and pestle or blender, combine coriander stems, garlic cloves, chilli padi, lemongrass, lime juice, sugar, fish sauce, and Mama seasoning packs. Blend or pound until smooth. Slowly add oil while mixing to emulsify.
Assemble Salad: In a large bowl, combine cooked noodles, minced pork, shrimps, cherry tomatoes, long beans, shallots, coriander leaves, and kaffir lime leaves. Pour the dressing over and toss well to combine.
Serve: Serve immediately to enjoy the fresh, sweet, sour, spicy, and savory flavors.
