Instructions

  1. Cook sausages and bacon: Heat a cast iron pan and add breakfast sausages. Start layering in the bacon. Add pepper but no salt as bacon and sausages are already salty. Add a touch of butter. Turn sausages and bacon to cook evenly.
  2. Add tomatoes and bake: Add tomatoes to the pan once sausages have color. Let tomatoes start to break down. Transfer the whole skillet into the oven and bake for about 4 minutes.
  3. Fry eggs: In a separate pan, add a touch of oil and butter. Crack eggs into the pan. Season with pepper, salt, and a little chili flakes. Add a touch of Sriracha sauce to elevate the flavor. Cook eggs until crispy underneath and runny in the middle.
  4. Prepare tomatoes: Drain the sausages from the pan. Crush the cooked tomatoes to release water. Add aged balsamic vinegar and let it sit.
