Ingredients

  1. chicken - 500 grams (skin and bones removed, cut into serving pieces)
  2. five spice powder - 1 teaspoon (seasoning)
  3. sugar - 1 teaspoon (seasoning)
  4. white pepper - 1/2 teaspoon (crown white pepper used)
  5. soy sauce - 2 tablespoons (seasoning)
  6. Maggi magic syrup - 1 tablespoon (seasoning)
  7. tapioca starch - 1/2 cup (for coating)
  8. fresh basil - 1/2 cup (to fry and serve with chicken)
  9. salt - to taste (to season after frying)
  10. ground black pepper - to taste (to season after frying)
  11. oil - enough for deep frying (for deep frying)

Instructions

  1. Prepare Chicken: Remove skin and bones from the chicken and cut into serving pieces.
  2. Marinate Chicken: Season the chicken with five spice powder, sugar, white pepper, soy sauce, and Maggi magic syrup. Mix well and marinate for at least 1 hour.
  3. Coat Chicken: Add tapioca starch to the marinated chicken and toss until evenly coated.
  4. Heat Oil: Heat oil to 300°F (about 150°C) for frying.
  5. Fry Chicken: Fry the chicken pieces in batches to avoid overcrowding. Fry for 6 to 7 minutes or until crispy and golden brown.
  6. Fry Basil: Carefully fry the fresh basil leaves for 1 minute until crispy.
  7. Combine and Season: Mix the fried basil with the fried chicken. Season with salt and ground black pepper to taste and toss quickly.
