Prepare the dough: In a bowl, combine flour, warm water, sunflower seed oil, and a pinch of salt. Mix first with a fork, then knead by hand until smooth. Place dough on the counter, cover with cling film, and let rest for 10 minutes.
Prepare the filling: Press the fresh cheese slightly to remove excess moisture. Add sugar and adjust sweetness to taste. Mix well.
Roll out the dough and cut circles: Divide the dough into two parts. Roll each part out with a rolling pin. Cut out small circles using a glass.
Fill and shape vareniki: Place a spoonful of cheese filling in the center of each dough circle, add one cherry in syrup on top. Fold the dough over to form a half-moon shape and seal the edges well.
Cook vareniki: Bring salted water to a boil. Drop vareniki into boiling water. When they float to the surface, they are cooked and ready to be removed.
Finish and serve: Drain vareniki and toss gently with butter in a bowl. Serve with a spoonful of sour cream, drizzle with cherry syrup and honey, and sprinkle with almonds.
