Instructions

  1. Marinate the Beef: Season the sliced beef flank steak with ground black pepper and light soy sauce. Coat the beef with beaten egg and corn starch to prepare for stir-frying.
  2. Prepare Vegetables: Julienne the red bell pepper, celery, and carrot. Mince cilantro stems, garlic, celery, and carrot for added flavor.
  3. Heat the Wok: Heat a wok until very hot. Use the hot wok and cold oil technique to prevent sticking.
  4. Cook the Beef: Stir-fry the marinated beef quickly in the hot wok until just cooked. Remove and set aside.
  5. Stir-Fry Vegetables: Add minced garlic, minced celery, minced carrot, and minced cilantro stems to the wok and stir-fry briefly. Add sliced onion and julienned red bell pepper, celery, and carrot. Stir-fry until vegetables are crisp-tender.
  6. Combine and Season: Return the cooked beef to the wok. Add light soy sauce, oyster sauce, sugar, ground black pepper, and water. Stir well to combine.
  7. Thicken Sauce: Add potato starch slurry to the wok and stir until the sauce thickens.
  8. Finish and Garnish: Add lemon juice for brightness. Garnish with julienned green onion before serving.
