Ingredients

  1. fresh pumpkin - about 2 cups puree (peeled, seeded, cut into chunks and blended into puree)
  2. all-purpose flour - 2 cups (sifted)
  3. salt - 1 teaspoon
  4. baking soda - 1 teaspoon
  5. baking powder - 1 teaspoon
  6. groundnut milk - 1 teaspoon (or any nut milk)
  7. eggs - 2 (large)
  8. vegetable oil - 1 cup (or any oil of choice)
  9. granulated sugar - 1 cup (adjust to taste for sweetness)
  10. vanilla extract - 1 tablespoon (for flavor)

Instructions

  1. Prepare Pumpkin Puree: Wash, peel, and remove seeds from fresh pumpkin. Cut into chunks. Blend with a little water until smooth to make about 2 cups of puree.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together all-purpose flour, salt, baking soda, baking powder, and groundnut milk.
  3. Mix Wet Ingredients: In another bowl, beat eggs, then add vegetable oil, granulated sugar, and vanilla extract. Mix well.
  4. Combine Pumpkin Puree with Wet Ingredients: Add 2 cups of pumpkin puree to the wet mixture and mix until combined.
  5. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and mix until just incorporated.
  6. Prepare Baking Pan and Bake: Line a baking pan with parchment paper. Pour batter into the pan, gently tap to remove air bubbles, and add desired toppings. Bake in a preheated oven at 350°F (175°C) for 40 minutes or until a toothpick inserted comes out clean.
