Ingredients

  1. Yukon gold potatoes - 4 (cut into bite-sized pieces)
  2. Shishito peppers - 5 (cut into bite-sized pieces, optional)
  3. Water - 3 cups
  4. Soy sauce - 3 tbsp
  5. Sugar - 1 tbsp
  6. Honey - 1 tbsp
  7. Mirin - 2 tbsp
  8. Sesame seeds - to taste (for garnish)

Instructions

  1. Prepare the Potatoes and Peppers: Cut the Yukon gold potatoes and shishito peppers into bite-sized pieces.
  2. Make the Sauce: In a large pan, combine water, soy sauce, sugar, honey, and mirin. Mix well.
  3. Cook the Potatoes: Add the potatoes to the pan and stir. Cook over medium-high heat. Once boiling, cover and cook for 10 minutes. Uncover, stir, and cook for another 10 minutes or until fork tender.
  4. Add Shishito Peppers: Once most of the liquid has evaporated, turn off the heat, add the shishito peppers, and gently mix.
  5. Serve: Place the potatoes on a serving plate and garnish with sesame seeds.
