  2. chili - 1/4 chili (about a quarter of a chili, adjust to taste)

  6. pasta water - watch the video to see (reserved water from cooking pasta, added to sauce)
  7. butter - watch the video to see (a knob to melt into the pasta for creaminess)
  8. lemon - 1 lemon (juice and a little zest, to taste)
  9. Parmesan cheese - watch the video to see (grated, to taste)

Instructions

  1. Prepare garlic and chili: Slice half a large garlic clove thickly and chop about a quarter of a chili. Roughly chop some parsley.
  2. Sweat garlic and chili: Heat olive oil in a pan, add garlic and chili, and cook gently to sweat them without burning, allowing the oil to absorb their flavors.
  3. Add cooked pasta: Add the cooked pasta to the pan, stir well, and add a little reserved pasta water to loosen the sauce.
  4. Add butter and lemon: Add a knob of butter to melt into the pasta for creaminess, then squeeze in lemon juice and add a little lemon zest.
  5. Finish and serve: Add grated Parmesan cheese and chopped parsley, stir again with a bit more pasta water if needed, then plate and serve immediately.
