Ingredients

  1. flour - 2 cups (all-purpose flour)
  2. baking soda - 1/2 teaspoon (leavening agent)
  3. sugar - 1 tablespoon (granulated sugar)
  4. salt - 1/2 teaspoon (table salt)
  5. baking powder - 1 teaspoon (leavening agent)
  6. paprika - 1/2 teaspoon (smoked or sweet paprika)
  7. garlic powder - 1/2 teaspoon (ground garlic)
  8. buttermilk - 1 cup (for moisture and tang)
  9. melted butter - 1/4 cup (unsalted)
  10. Dijon mustard - 1 tablespoon (adds tangy flavor)
  11. egg - 1 (large)
  12. ham - 3/4 cup (leftover cooked ham, diced)
  13. Gruyere cheese - 3/4 cup (shredded)
  14. chives or scallion - 1/4 cup (chopped)

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, baking soda, sugar, salt, baking powder, paprika, and garlic powder until fully combined.
  2. Combine wet ingredients: In a separate bowl, stir together the buttermilk, melted butter, Dijon mustard, and egg until fully combined.
  3. Combine wet and dry: Make a well in the dry ingredients and pour in the wet mixture. Stir gently until just combined; do not overmix.
  4. Add ham, cheese, and chives: Fold in the diced ham, shredded Gruyere cheese, and chopped chives or scallions until evenly distributed.
  5. Fill muffin tins: Spoon the batter into a muffin tin, filling each cup about three-quarters full as the muffins do not rise much.
  6. Bake: Bake in a preheated oven at 375°F (190°C) for about 25 minutes or until golden brown and set in the middle. Muffins should be firm to the touch.
