  4. salt - to taste

Instructions

  1. Prep Potatoes: Start with washed russet potatoes. Before baking, make a quick finger move for millennials, then roast your potatoes at 400°F until they're fork tender, which should take about 45-50 minutes.
  2. Cut and Smash Potatoes: Cut them through but not all the way and then flip them all over. Next, smash them down to make the peels come off easier. As you peel them back, scrape away the flesh. This whole process should take less than 3 minutes.
  3. Rice Potatoes: While the potatoes are still steaming hot, push them through a ricer.
  4. Add Dairy and Season: Add melted cream and butter. Season with salt and a little white pepper. Bring it gently together but don't overwork it.
  5. Optional Smoothing Step: For even smoother mashed potatoes, you can use a drum sieve.
