Ingredients

  1. red potatoes - 3 lb (peeled and quartered)
  2. garlic bulb - 1 (whole, top sliced to expose cloves)
  3. olive oil - watch the video to see (for roasting garlic)
  4. salt - watch the video to see (to taste)
  5. unsalted butter - 4.3 oz (120 g)
  6. whole milk - 1 cup (236 ml)
  7. heavy cream - 1/2 cup (118 ml)

Instructions

  1. Roast Garlic: Place the whole garlic bulb in a pot or wrap in parchment paper, drizzle with olive oil, and season with salt. Roast in a preheated oven at 375°F for about 40 minutes or until soft and slightly browned.
  2. Prepare Potatoes: Follow the same steps as Method 1 for preparing and boiling the potatoes.
  3. Mash Potatoes: After roasting, squeeze the garlic out of its skin and mash it. Mix it into the mashed potatoes prepared as in Method 1. Add a little bit of olive oil from the roasting process for extra flavor.
  4. Serve: Serve the mashed potatoes warm, seasoned to taste with salt.
