Ingredients

  2. Fresh brewer's yeast - 1-3 g (Use 1-3 g)
  3. Water - 700 g (Use 700 g)
  4. Salt - 25 g (Use 25 g)
  5. Sugar - 8 g (Add 8 g if baking in home oven)
  6. Extra virgin olive oil - 80 g (Add 30 g if baking in home oven; 50 g for topping)
  7. Truffle cream - 500 g (Use 500 g for topping)
  8. Roasted cooked ham - 500 g (Use 500 g for topping)
  9. Mozzarella bites in buffalo cream - 400 g (Use 400 g for topping)
  10. Parmesan wafer - 200 g (Use 200 g for topping)

Instructions

  1. Prepare the dough: In a bowl or machine, combine flour, fresh brewer's yeast, water, and salt. Knead uniformly for about 20 minutes.
  2. Rest the dough: Let the dough rest on the work surface for 15 to 40 minutes.
  3. Form dough balls: Divide the dough into balls of approximately 260 g each.
  4. Proof the dough: Allow the dough balls to rise for 8 to 12 hours at a temperature between 18-24°C.
  5. Shape the pizza: Once risen, stretch the dough balls into pizza bases.
  6. Add toppings: Spread truffle cream over the base, then add roasted cooked ham and mozzarella bites in buffalo cream.
  7. Bake the pizza: Bake at 380-420°C or at the highest temperature of your home oven. If using a home oven, add sugar and olive oil to the dough.
  8. Finish toppings: After baking, top the pizza with parmesan wafers, fresh basil, black pepper, and drizzle with olive oil.
  9. Serve: Slice and serve the pizza hot.
