Guanciale - to taste (or pancetta, cooked until crispy)
Tonkotsu seasoning packet - to taste (from Ramen)
Pasta water - as needed (to loosen sauce)
Instructions
Cook Guanciale and Ramen: Cook guanciale until crispy. Boil Ramen noodles as per package instructions.
Make Carbonara Sauce: In a pan, combine egg yolks, Pecorino Romano, Parmesan, and a bit of the tonkotsu seasoning packet. Add cooked noodles and a little pasta water to achieve a creamy sauce.
Combine and Serve: Toss the noodles in the sauce until evenly coated. Serve with additional cheese if desired.
