Ingredients

  1. Instant Ramen - 3 packets (Nissan tonkotsu recommended)
  2. Egg yolks - to taste
  3. Pecorino Romano - to taste (finely shredded)
  4. Parmesan - to taste (finely shredded)
  5. Guanciale - to taste (or pancetta, cooked until crispy)
  6. Tonkotsu seasoning packet - to taste (from Ramen)
  7. Pasta water - as needed (to loosen sauce)

Instructions

  1. Cook Guanciale and Ramen: Cook guanciale until crispy. Boil Ramen noodles as per package instructions.
  2. Make Carbonara Sauce: In a pan, combine egg yolks, Pecorino Romano, Parmesan, and a bit of the tonkotsu seasoning packet. Add cooked noodles and a little pasta water to achieve a creamy sauce.
  3. Combine and Serve: Toss the noodles in the sauce until evenly coated. Serve with additional cheese if desired.
