Ingredients

  1. unsalted butter - 113 g (softened, use European butter)
  2. powdered sugar - 35 g
  3. egg yolks - 36 g (from large eggs)
  4. vanilla - 1/2 tsp
  5. cake flour - 100 g (plus more as needed)
  6. cornstarch - 30 g
  7. milk powder - 20 g
  8. salt - 1/4 tsp
  9. pineapple jam - 400 g (homemade or store-bought, keep it chilled in the fridge)
  10. egg yolk - 1 (for egg wash)
  11. oil - 1/2 tsp (for egg wash)
  12. salt - watch the video to see (tiny pinch, for egg wash)

Instructions

  1. Prepare the pastry: Cream together the softened unsalted butter and powdered sugar. Add in the egg yolks and vanilla, and mix until well combined.
  2. Combine dry ingredients: In a separate bowl, whisk together the cake flour, cornstarch, milk powder, and salt.
  3. Form the dough: Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. If the dough is too sticky, add a bit more cake flour.
  4. Prep the filling: Ensure the pineapple jam is chilled and ready to use.
  5. Assemble the tarts: Portion the dough and flatten each piece to form a small disc. Place a small amount of pineapple jam in the center, then wrap and seal the dough around the jam.
  6. Apply egg wash: Mix the egg yolk, oil, and a tiny pinch of salt for the egg wash. Brush the surface of each tart gently.
  7. Bake: Bake in a preheated oven until golden brown. Please watch the video for detailed instructions on temperature and timing.
