Prepare Turkey: Carefully cut the whole turkey into very small chunks to allow seasonings to penetrate well. Use a sharp knife and take your time.
Make Green Marinade: In a blender, combine garlic, ginger, turmeric, fresh parsley, jalapeño peppers, and onion. Blend until smooth to create the green seasoning.
Season Turkey: In a large bowl, add turkey chunks, bay leaves, curry powder, thyme, rosemary, Knorr seasoning, nutmeg, salt, minced onion, spring onions, and the green marinade. Mix thoroughly to coat the turkey evenly.
Steam Turkey: Place the seasoned turkey in a large pot and cover. Steam the turkey without adding water for 20 to 30 minutes, allowing it to release its own juices.
Stir and Continue Steaming: After initial steaming, stir the turkey to mix juices and continue steaming for another 15 minutes.
Drain Excess Stock: Transfer the turkey to a colander to drain excess stock. Save the stock for use in other recipes like jollof rice or fried rice.
Bake Turkey: Place the drained turkey chunks on an oven tray and bake at 350°F (175°C) for 30 to 45 minutes until golden brown. Alternatively, you can fry the turkey if preferred.
Prepare Pepper Sauce: Blend frozen bell peppers, jalapeño pepper, parsley, ginger, garlic, and hot pepper. Cook the blended mixture in a pot until the water dries out.
Cook Sauce: Add oil to the dried pepper mixture and fry for about 10 minutes. Add chopped onions (cut to be very visible), spring onions, and no seasoning for extra flavor. Fry together for 5 minutes.
Combine Turkey and Sauce: Mix the baked turkey with the prepared pepper sauce. Garnish with chopped spring onions and parsley before serving.
