Instructions
Prepare Syrup: Combine sugar, lime juice (half initially, half later), bruised ginger slices, and passion fruit pulp in a pot. Add water and bring to a simmer, not a boil, until sugar dissolves.
Cool and Strain: Let the mixture cool, then strain to remove solids.
Make Juice: Mix the syrup with cold water to taste, adjusting for sweetness. Optionally, add carbonated water for a sparkling version or mix with champagne for an adult beverage.
