Ingredients

  1. English cucumber - 1 (or 2 to 3 kirby cucumbers, washed)
  2. onion - 1/4 cup (thinly sliced)
  3. green onion - 1 (chopped)
  4. garlic cloves - 2 (minced)
  5. soy sauce - 2 tablespoons
  6. hot pepper flakes - 2 teaspoons
  7. sesame oil - 2 teaspoons
  8. sesame seeds - 2 teaspoons
  9. sugar - 1 teaspoon (optional)

Instructions

  1. Prepare the Cucumber: Cut the English cucumber lengthwise and then slice it thinly diagonally.
  2. Slice Onions and Garlic: Thinly slice the onion to make about a quarter cup and mince the garlic cloves.
  3. Chop Green Onion: Chop one green onion.
  4. Mix Ingredients: In a large bowl, combine the sliced cucumber, onion, green onion, and minced garlic.
  5. Add Seasonings: To the bowl, add 2 tablespoons of soy sauce, 2 teaspoons of hot pepper flakes, 2 teaspoons of sesame oil, 2 teaspoons of sesame seeds, and 1 teaspoon of sugar (optional). Mix well until the sugar is fully dissolved and the cucumber is well coated with the seasonings.
