Instructions
Prepare the dough: Beat butter at room temperature together with a little oil. Add two types of sugar, egg, and vanilla extract and mix well.
Add spices and dry ingredients: Add a chai tea bag or chai seasoning mix and beat. Then add the flour and baking soda and incorporate with a spatula.
Chill the dough: Form the dough into a sausage shape on plastic wrap. Stir well and place in the freezer for about 20 minutes or until solid.
Slice and bake: Cut semi-thin pieces from the chilled dough. Place on a prepared tray and bake in an oven preheated to 350°F (175°C) for about 14 minutes. Remove and let cool completely.
Make the icing: Mix powdered sugar with nutmeg. Gradually add milk until the icing reaches a spreadable consistency.
Decorate the cookies: Cut marshmallows in half and draw eyes on them with black icing. Use a shaving as a nose. Spread a little icing on the cookie and add the marshmallow head. Add sprinkles as buttons and draw two little arms with icing.
