  10. fresh basil - watch the video to see (added at the end for freshness)
  11. parmesan cheese - watch the video to see (added off the heat after cooking)
  12. black pepper - watch the video to see (freshly ground, added at the end)

Instructions

  1. Prepare Ingredients: Halve the cherry tomatoes (red and yellow). Chop or tear the kale. Zest a generous amount of lemon. Mince or crush garlic cloves.
  2. Start Cooking Pasta and Tomatoes: In a large skillet or pot, drizzle olive oil and add garlic. Add dry spaghetti and pour in boiling water just enough to cover the pasta (about 3.5 cups). Add 1 tablespoon sea salt. Add the halved cherry tomatoes. Bring to a boil uncovered.
  3. Cook Pasta and Tomatoes Together: Let the mixture cook for about 6 minutes, uncovered, stirring occasionally. This allows the pasta to start cooking and tomatoes to release juices, but the water remains to create a soupy base.
  4. Add Greens: Add chopped kale and continue cooking for another 4-5 minutes until pasta is al dente and kale is tender but vibrant.
  5. Finish the Dish: Turn off the heat. Add fresh arugula and basil, tossing gently to combine without cooking these delicate greens. Add lemon zest, red chili flakes, freshly ground black pepper, and a finishing sprinkle of salt to taste.
  6. Add Cheese: Add grated parmesan cheese off the heat to avoid clumping. Toss well to combine and create a creamy texture from the pasta starch and cheese.
  7. Serve: Serve immediately while warm. The sauce will be creamy but somewhat soupy due to the cooking method.
