  3. icing sugar - 40 g (for crumble)
  4. cold butter - 70 g (for crumble)
  5. bitter cocoa powder - 40 g (for crumble)

  7. mascarpone cheese - 350 g (for cream)
  8. sugar - 85 g (for cream)
  9. egg yolks - 3 (for cream)
  10. water - 50 g (for syrup)
  11. hazelnuts - 80 g (toasted for layering)
  12. dark chocolate drops - 60 g (for layering)

Instructions

  1. Prepare the Crumble: Mix flour, brown sugar, icing sugar, cocoa powder, and salt in a bowl. Add cold butter and mix until sandy.
  2. Bake the Crumble: Spread the crumble mixture on a baking tray and bake in a preheated oven at 180°C for 10 minutes.
  3. Make Sugar Syrup: In a saucepan, combine sugar and water. Heat until it reaches 121°C.
  4. Prepare Mascarpone Cream: In a mixer, add egg yolks. Once the sugar syrup reaches 121°C, slowly pour it into the mixer while increasing the speed.
  5. Finish the Cream: Add vanilla and mascarpone to the mixer and blend at low speed for 10-20 seconds.
  6. Assemble the Dessert: Layer mascarpone cream in a glass, followed by crumble, hazelnuts, and chocolate drops. Repeat layers as desired.
