Ingredients

  2. pizza sauce - watch the video to see (tomato-based sauce, can be store-bought or homemade with crushed peeled tomatoes and salt)
  3. shredded mozzarella cheese - watch the video to see (preferably fresh mozzarella cut by hand, but shredded plastic mozzarella used in video)
  4. pepperoni slices - watch the video to see (freshly cut from deli, diced or whole slices)
  5. red bell pepper - watch the video to see (diced)
  6. onion - watch the video to see (diced, preferably caramelized but raw in video)
  7. fresh basil leaves - watch the video to see (fresh preferred, added on tomato before toppings to avoid burning)
  8. dried basil - watch the video to see (used as a sprinkle on top in second attempt, not recommended)
  9. minced garlic - watch the video to see (added to sauce in video, optional)
  10. crushed red chili flakes - watch the video to see (optional for heat, use according to taste)
  11. vegetable oil - watch the video to see (for greasing cast iron pan)

Instructions

  1. Prepare the pan and dough: Add a little oil to the cast iron pan and spread it around including the sides. Place the pizza dough ball in the pan and spread it out to cover the base and sides. Cover with plastic wrap and let it rest at room temperature for at least 30 minutes to 1 hour to allow the dough to relax and rise slightly.
  2. Pre-bake the dough: Preheat the oven to 500°F (260°C). Shape the dough to fit the pan evenly. Bake the dough in the oven for 5 minutes to partially cook the base.
  3. Prepare toppings: Dice the pepperoni, red bell pepper, and onion. Keep the cheese and fresh basil refrigerated until ready to use.
  4. Assemble the pizza: Remove the partially baked dough from the oven. Spread pizza sauce evenly over the dough. Sprinkle minced garlic and crushed red chili flakes on the sauce if desired. Add fresh basil leaves on top of the sauce before adding other toppings to prevent burning. Add diced pepperoni, bell peppers, and onions. Cover the toppings with shredded mozzarella cheese to protect them during baking.
  5. Bake the pizza: Return the assembled pizza to the oven and bake for about 15 minutes or until the cheese is melted and bubbly and the crust is cooked through and golden brown. Watch carefully to avoid burning the cheese.
  6. Serve: Remove the pizza from the oven and let it cool slightly before slicing. Serve hot.
