Ingredients

  1. chicken wings - 2-3 lb
  2. scallions - 2 bunch (2 bunch)
  3. large onion - 1
  4. habanero pepper - 2 (scotch bonnet is better if you can find them)
  5. thyme - 10 sprigs (plucked)
  6. garlic cloves - 10
  7. lime juice - 1/3 cup
  8. orange juice - 1/3 cup
  9. soy sauce - 1/2 cup
  10. coconut sugar or brown sugar - 1/2 cup
  11. distilled white vinegar - 2 TBSP
  12. cinnamon - 1 tsp
  13. nutmeg - 1/2 tsp
  14. coriander - 1 TBSP
  15. black pepper - 1 1/2 tsp
  16. allspice - 1 TBSP
  17. unsalted butter - 3 tbsp (for jerk butter sauce)

Instructions

  1. Prepare Marinade: Combine scallions, large onion, habanero peppers, thyme, garlic cloves, lime juice, orange juice, soy sauce, coconut sugar, white vinegar, cinnamon, nutmeg, coriander, black pepper, and allspice in a food processor. Blend until smooth.
  2. Marinate Chicken: Reserve 40% of the marinade for the jerk butter sauce. Pour the remaining marinade over the chicken wings, ensuring they are well coated. Marinate in the fridge overnight or for at least a couple of hours.
  3. Air Fry: Air fry the marinated chicken wings until fully cooked and crispy.
  4. Make Jerk Butter Sauce: Reduce the reserved marinade over medium heat until thick. Add cubes of cold unsalted butter, stirring until the sauce is smooth.
  5. Serve: Toss the cooked wings in the jerk butter sauce and serve.
