Instructions
Prepare Chicken Bones: Oil the chicken bones and roast them until they are a deep, rich brown.
Simmer with Vegetables: Place the roasted bones in a pot filled with water. Add chopped onions, celery, carrots, and garlic. Allow to simmer for 90 minutes.
Add Herbs: Add sage, rosemary, and thyme to the pot and simmer for an additional 30 minutes.
Skim and Strain: Skim off any scum that forms on the surface during simmering for a cleaner stock. Strain the stock through a cheesecloth for best results.
