Ingredients

  1. Green onion - 20g (finely chopped)
  2. Water - 140ml (for broth)
  3. Kombu - 2g (or MSG)
  4. Soy milk - 200ml (unsweetened)
  5. Soy sauce - 1 tbsp (15ml) (for flavor)
  6. Sake - 1 tbsp (15ml) (for flavor)
  7. Salt - 1/4 tsp (1.5g) (to taste)
  8. Sugar - 1/4 tsp (1.5g) (to balance flavor)
  9. Oyster sauce - 1/2 tsp (3.5g) (for depth of flavor)
  10. Neutral oil - 1 tsp (5ml) (for cooking)
  11. Pork mince - 100g (10% fat)
  12. Garlic - 1 tsp (8g) (minced)
  13. Ramen noodle - 130g (follow packet instructions)
  14. Nori sheet - 1/2 (for garnish)

Instructions

  1. Prepare the Broth: In a pot, combine water, kombu, soy milk, soy sauce, sake, salt, sugar, and oyster sauce. Heat on medium.
  2. Cook the Pork: In a separate pan, heat oil and add pork mince. Season with salt and black pepper. Cook until the color changes.
  3. Add Garlic: Add minced garlic to the pork and cook for 20-30 seconds.
  4. Boil the Broth: Bring the broth to a boil, then reduce heat and simmer for 30 seconds to evaporate the alcohol.
  5. Cook the Noodles: Cook ramen noodles according to package instructions in plenty of water.
  6. Assemble the Ramen: In a bowl, combine noodles, broth, pork, and garnish with green onion and nori.
