Ingredients

  1. pasta - double portion (chip pasta, as used in the recipe)
  2. olive oil - to taste (just a touch)
  3. bacon - to taste (strippy, to be cooked until crispy)
  4. black pepper - to taste
  5. garlic - to taste (sliced thinly)
  6. mushrooms - 3 (about three, not sliced too thinly)
  7. salt - to taste (a touch)
  8. red chili - 1 (one beautiful chili)
  9. cream fresh - to taste (be generous)
  10. egg - 1 (mixed with cheese)
  11. Grana Padano (or Parmesan) - to taste (grated inside the egg)
  12. peas - to taste (preferably frozen, as per Gordon)
  13. pasta water - as needed (to adjust consistency)

Instructions

  1. Cook Pasta: Boil pasta for 8 minutes or until cooked. Use a large pot to avoid overcrowding.
  2. Prepare Ingredients: In a pan, add a touch of olive oil and cook the bacon until crispy. Then, add black pepper, thinly sliced garlic, and mushrooms. Season with a touch of salt.
  3. Add Chili: Introduce a whole red chili to the pan for added heat.
  4. Incorporate Cream Fresh: Once the ingredients are sautéed, add cream fresh to the pan.
  5. Mix Egg and Cheese: In a separate bowl, mix an egg with grated Grana Padano or Parmesan cheese.
  6. Combine Ingredients: Add the peas to the pan, followed by the pasta and the egg-cheese mixture. If the sauce is too thick, adjust the consistency with pasta water.
  7. Final Touches: Serve hot with additional cheese on top if desired.
