Ingredients

  3. onion - watch the video to see (thinly sliced lengthwise or chopped as preferred)
  4. garlic - watch the video to see (crushed and chopped)
  5. egg - watch the video to see (at room temperature for easier mixing)
  6. oil - watch the video to see (for sautéing)

Instructions

  1. Prepare the ampalaya: Split the ampalaya in the middle, remove the seeds, and cut into serving pieces.
  2. Prepare the vegetables: Cut tomatoes into small cubes. Slice onions thinly lengthwise or chop as preferred. Crush and chop garlic.
  3. Heat oil and cook garlic: Add oil to pan and add garlic before the oil is hot to cook it slowly and avoid burning.
  4. Sauté onion: Add sliced onions and sauté until softened and layers start separating.
  5. Add tomatoes: Add tomatoes and sauté until softened and juice evaporates.
  6. Stir-fry ampalaya: Add ampalaya and stir-fry for about one minute.
  7. Season and add eggs: Season with salt and ground black pepper. Pour in eggs and let them settle without mixing immediately.
  8. Mix eggs and cook: Once eggs start to set, mix them with the rest of the ingredients and continue cooking until done.
  9. Serve: Transfer to a serving plate and serve hot.
