Ingredients

  1. garlic - 2 cloves (minced)
  2. warm water - 1/2 cup
  3. plantains - watch the video to see (cut into 3/4 to 1/2 inch slices)
  4. salt - to taste (for garlic water)

Instructions

  1. Prepare Garlic Water: Add minced garlic to half a cup of warm water.
  2. Cut Plantains: Cut off each end of the plantains, make one slit on one side not too deep, then one on the other side. Chop them into 3/4 to 1/2 inch slices.
  3. First Fry: Deep fry the plantain slices at 350°F for about 3 to 4 minutes until they barely turn brown.
  4. Smash Plantains: After the first fry, take the plantains out and smash them to flatten.
  5. Dip in Garlic Water: Dip the smashed plantains in the garlic water for 1 second.
  6. Second Fry: Deep fry again for about 1 and 1/2 minutes.
  7. Drain and Season: Place them on paper towels to remove excess grease, then season with a bit of the garlic water and salt to taste.
