Instructions
Beat the Eggs: Beat the eggs well with half the salt, black pepper, chives, and tarragon (if using).
Prepare the Pan: Heat an 8-inch non-stick frying pan over medium-low heat with a touch of butter, ensuring the pan is fully coated.
Cook the Omelette: Pour in the eggs and immediately start stirring vigorously. Continue for under 2 minutes, depending on your preference for doneness.
Shape the Omelette: Start bringing the eggs together to one side of the pan. Roll the omelette slightly, then tap the handle to fold it over.
Serve: Invert the omelette onto a plate, gloss with a bit more butter, and add the rest of the salt. Serve immediately.
